This is a short red rock slot canyon not far out of Kanab. Next we went to the Great Chamber which was so different and also so strikingly stunning. Truly, Weston’s enthusiasm is what made this tour so perfect. He gave great information and showed us the best spots for photos. We were there mostly by ourselves which was just so cool. Weston took us first to the Peekaboo Slots which were truly miraculous. Kanab's Peek-a-Boo Canyon has about half mile of winding passages up to 100 ft (30 m) deep that can be accessed from US 89 at the Mount Carmel. Flash flooding can be dangerous in this area so don't explore the canyon when it rains. It was like a Disney ride only so much better! The best time to hike in the area is spring and fall, when it's not too hot and the chances of rain are low. I am usually a back seat driver who is squeamish about driving too fast, etc but I could tell Weston really knew what he was doing and had solid experience driving the UTV and I actually had so much fun just on the UTV ride, I couldn’t stop laughing and smiling as we drove around to the various spots. Weston, our guide, was so enthusiastic sharing all sorts of interesting information about the area. This was one of the best days I’ll cherish forever. As a token for the inconvenience he would throw in another bottle of wine, he didn't know that the wine we had was a good Italian for $400 and desserts. The chocolate cake was something I had seen on a television show. We ordered the hit me chocolate cake and the donut wheel. If you’re with a group of 4-6 it’s absolutely worth the price. Tender and sweet and we honestly couldn’t get enough. The lobster was probably the best cooked lobster I’ve had in my life. It was 2.5 lbs of small lobsters cooked in an incredible Asian sauce with garlic, scallions and soy. The other star of the show was the Cantonese lobster. The fish was fresh and it was dressed very lightly so not to over power the fish. The salmon belly carpaccio was a true stunner. The sauce and the potatoes enhanced the whole dish. I didn’t try it but was told it was delicious. We also ordered the hellfire roll which is a spicy tuna roll. Crispy shrimp were large and fresh and a decent portion. Oysters and shellfish platter were delicious and. Star of the show is the truffle crispy rice with sashimi. The flowers are artificial but it doesn’t matter. The space is beautiful with lots of flowers and very cool designs. There are other plates that caught my fancy so I'll be back. Mind you, I didn't order the seafood so it might be different if I did but I was happy with my line up that night.
